Let’s Cook 9.1.21

I have a couple recipes from RK of St. Clair County.  This first one for Peach Cobbler sounds good and easy! A note about this recipe, RK did not specify about the peaches, i assume she uses canned sliced peaches.

Peach Cobbler

1 cup pancake mix

1 stick margarine, melted

1 cup milk

1 cup sugar

16 oz can peaches

Combine the pancake mix, margarine, milk and sugar. Pour into a large casserole. Top with peaches. Bake at 350 degrees for 35 minutes till golden brown. It will be slightly runny. Let sit for 15 minutes, serve warm.

RK also sends this “very old family recipe” for Denmark pancakes. The part in parentheses is my own personal note, not hers.

Denmark pancakes

3 cups flour

1 tsp salt

2 eggs

1 can Milnot

1 can water

Mix the flour, salt, eggs and Milnot. Fill the Milnot can with water, and add just enough water to make a thick batter). In a heavy skillet, melt shortening to cover bottom to about 1/2 inch. When shortening hot, pour batter in, scramble like eggs.. Cook till golden brown. Serve with choice of  jelly, apple butter or syrup. Or you could add corn to make corn fritter pancakes, or sliced apples.
