This week I have two recipes to share. The first one comes from Monika Klamberg of Mascoutah, IL. This recipe sounds like a great meal for kids who are picky about what they will eat!
Pizza Casserole

■ 1 lb hamburger or
ground turkey
■ 1 15 1/2 oz jar pizza
sauce
■ 1 lg. onion, chopped
■ 4 oz. pepperoni slices
■ 1 1/2 cup uncooked
elbow macaroni
■ 8 oz pkg shredded
Mozzarella cheese
Brown hamburger with onion in a large skillet. Drain off fat. In another pan, bring water to a boil, add macaroni and cook for 10 to 12 minutes, until tender. Drain well. Mix pizza sauce with macaroni and hamburger mixture. Place in 8”x8” casserole, alternating layers with pepperoni and cheese. (be sure to end up with a layer of cheese on top). Bake uncovered at 350 degrees for 30 to 40 minutes.
This next recipe is one I tried for the first time this past week. I found the recipe online when I was looking for a different way to fix a ham steak. This was pretty good, and the apples and maple syrup added a nice flavor to the ham. This makes a nice fall dish. I served sweet potatoes and peas with it to round off the meal. I will print the recipe the way I found it, but read on past it to find out how I adjusted the recipe.
Autumn Spice Ham Steak
■ 1 1/2 Tbsp butter
■ 2 lb ham steak
■ 1 red apple, cored and
thinly sliced
■ 1 green apple, cored
and thinly sliced
■ 1/2 cup maple pancake
syrup
■ 1 tsp cinnamon
Melt butter in a large skillet over medium-high heat. Fry ham on both sides till browned. Lay apples over the ham, pour syrup over the apples. Reduce heat to medium, simmer, stirring occasionally until apples are tender. Sprinkle on cinnamon and serve.
I thought it might take a long time for the apples to cook while on top of the ham. So I placed the apple slices in a bowl, sprinkled on a bit of brown sugar and cooked them in the microwave at 50% power for a few minutes, until almost tender. Then I added the apples to the ham, and cooked a bit longer. Also, if you have it, please use real maple syrup rather than pancake syrup! I used 1 Gala apple and 1 Granny Smith apple. In case you are wondering, I did not peel the apples.
