I am always on the lookout for new recipes, and I have a box full of recipes that I plan to try someday. Recently I pulled from that box a recipe for Cajun Chicken, and I gotta tell you this recipe is a winner! I loved it.
CAJUN-STUFFED CHICKEN
■ 2 Tbsp olive oil
■ 1 cup diced onion
■ 1 cup diced red pepper
■ 1 cup diced green pepper
■ kosher salt
■ pepper
■ 4 boneless, skinless chicken breasts
■ 1 cup shredded Cheddar cheese
■ 2 Tbsp Cajun seasoning
Preheat the oven to 350 degrees. In a large skillet, over medium heat, preheat the oil. Cook the onions and peppers until soft. Add salt and pepper to taste. let cool slightly.
With a sharp knife, create a pocket in the chicken breast. Stuff the pocket with the vegetable mix. place the chicken back in the skillet (or baking dish). Top with Cheddar cheese. Sprinkle on the Cajun seasoning and more salt and pepper. Bake for 25 minutes, or until chicken reaches 165 degrees.
Here some notes about the above recipe:
1. I had trouble cutting a pocket into the chicken and I cut it nearly into 2 pieces. I then spread the vegetable mixture over the bottom piece of chicken, then laid the top piece over top. It worked just fine. Or you could pound the chicken thin, spoon the filling on and roll it up. Then place the rolled-up chicken seam side down in the pan.
2. I did not have Cajun seasoning on hand, so I used my Creole seasoning instead. My chicken had a nice flavor, but I think next time I will use Cajun seasoning as I like more spice. Cajun seasoning tends to be spicier than Creole. Cajun seasoning tends to have more cayenne pepper, whereas Creole uses more herbs like oregano and thyme. If you want to make your own Cajun seasoning, try this: mix 2 Tbsp paprika, 2 Tbsp garlic powder, 2 Tbsp oregano, 1 Tbsp kosher salt, 1 Tbsp onion powder, 2 tsp black pepper and 2 tsp cayenne pepper.
