I love breakfast food, but I am not inclined to make myself a big breakfast in the morning, so I often make “breakfast” for my supper. A few days ago, I tried a new recipe that turned out pretty good! This recipe is going into my binder of favorite recipes!
SAUSAGE, EGG and CHEESE ROLL-UPS
■ 5 eggs
■ 1 can Crescent Rolls
■ 8 sausage links
■ 4 slices Cheddar cheese
■ salt
■ pepper
Preheat the oven to 350 degrees. Cook sausage links. In a small bowl, beat the eggs. Reserve 2 Tbsp of the eggs, scramble the rest.
Unroll the Crescent dough into separate triangles. Cut each slice of Cheddar in half, place each half on the Crescent dough. Top with a spoonful of scrambled egg and 1 sausage link. Loosely roll up, place on an ungreased baking sheet. Note, you probably won’t be able to cover all the sausage and egg, that’s okay. Just pinch any edges together. Brush the tops with the reserved 2 Tbsp egg. Sprinkle on salt and pepper. Bake for 15 to 18 minutes until golden brown.
I made a small batch of this recipe, using a small can of Crescent rolls (4 rolls). As I did not have anything else with it, I ate 3! These turned out firm enough that I could pick it up to eat like a sandwich. It would be delicious drizzled with sausage gravy! A dash of Tabasco would be good too! If I make this recipe for a group, I would serve hash browns and/or a fresh fruit salad to go with it.
