Recently I had someone ask for a recipe to please her picky family. She wanted to make a fruit filled dessert such as pie, but was struggling to find something everyone would like. Some like apples, others hate it, same with any other fruit. She did not want to make multiple desserts. So I did some digging through my collection of recipes and found this one. I printed it years ago, but it deserves to be shown again. The title of the recipe says apples, but most any fruit can be used. Fresh peaches or plums would be a wonderful substitute. The wonderful thing about this recipe is that you can actually use two different fruits, simply make one half of the cake with a favorite fruit, and the other half with another fruit. I think peaches and apples would be a great combination, and likely please everyone.
QUICK DUTCH APPLE CAKE
■ 4 cooking apples (such as Jonathans)
■ 1/2 stick butter
■ 1/2 cup sugar
■ 1 egg
■ 1 cup milk
■ 2 cups flour
■ 2 1/2 tsp baking powder
■ 1/4 tsp salt
TOPPING:
■ 1/2 stick butter
■ 1/2 cup sugar
■ 1/2 cup flour
■ 1 tsp cinnamon
Soften the butter, but do not melt. In a medium size mixing bowl, cream the butter, sugar and egg until smooth. in another small bowl, mix the flour, baking powder and salt. Stir the flour mixture and milk, alternately into the butter mixture.
Spread onto a greased jelly roll pan. Arrange the apple slices over the top of the cake. To make the topping, cut the butter into small pieces, mix with sugar, flour and cinnamon. Sprinkle this topping evenly over the fruit. Bake at 350 degrees for about 30 minutes or until the apples are tender.
