When my kids were little, and somewhat picky about what they would eat, my mother-in-law would make “Breakfast Pizza”, and the kids would eat it without complaint because it’s “pizza”! I liked it too. I found this recipe, and while it’s not exactly like hers, it’s still pretty good.
BREAKFAST PIZZA
Serves 8
■ 1 tube (13.8 oz) refrigerated pizza dough
■ 2 Tbsp olive oil, divided
■ 6 eggs
■ 2 Tb sp water
■ 6 bacon strips, cooked and crumbled
■ 1 cup shredded Montery jack cheese
■ 1 cup shredded Cheddar cheese
Preheat oven to 400 degrees. Press pizza crust onto bottom and 1/2 inch up sides of a greased 15x10x1” pan. prick with fork. Brush with 1 Tbsp oil. Bake for 7 to 8 minutes until lightly browned.
Whisk eggs and water. heat 1 Tbsp oil in a skillet, scramble eggs. Spoon evenly over crust. Sprinkle with bacon and cheeses. Bake 5 to 7 minutes more.
This a recipe you can really play around with. Use sausage instead of bacon, or a combination of both. I would add some sauteed green pepper and onion. I suggest you add some salt and pepper to the eggs.
