This week I have a couple recipes from RK of St. Clair County. She sends a recipe for Green Tomato Pie, and I will be honest, I have never eaten green tomatoes. When I think of green tomatoes, I always think of the movie, Fried Green Tomatoes, which I love! I have always thought I would like to try fried green tomatoes, but maybe instead I will make this pie.
Green Tomato Pie

• 1 cup sugar
• 2 Tbsp flour
• 1 tsp salt
• 1/2 tsp cinnamon
• 1/2 tsp nutmeg
• 3 cups fine sliced green
tomatoes
• 3 Tbsp lemon juice
pastry for 2 crust pie
• 1 Tbsp butter
Combine sugar, flour, salt, and spices. Add tomatoes, toss lightly. Add lemon juice. Place crust in pie pan, spoon in tomato mixture. Dot with butter, cover with top crust. Flute edges, cut slits into top crust. Bake at 350 degrees until tomatoes are tender, about 1 hour.
Note, this pie would be pretty with a lattice top if you are so inclined.
This next recipe is for all you bacon lovers!
Bacon Spread

• 1 cup mayonnaise
• 1 med onion, chopped
• Bacon bits
• 8 oz shredded cheddar
cheese
Mix all, refrigerate. Serve with crackers
And finally, this sounds like a refreshing dish to serve on a hot day. I think it could be served with brunch or a nice luncheon.
Loupe Wedges

• 3 pkg lime gelatin
• 1 cup hot water
• 8 oz. plain yogurt
• 3 med. cantaloupes
Dissolve gelatin in hot water. Stir in yogurt. Chill until thick, but not set, about 45 minutes. Beat until doubled in volume. Cut melons in half, remove seeds and pat dry. Spoon whipped mixture into melon halves. Chill until firm.
