The other day I was going through my recipe box and I found this recipe that my mother-in-law Donna had given to me when we were first married. She would make these Tangy Barbecue Beef sandwiches to take to family reunions. Although it has been years since I had one of these sandwiches, I do remember them being very good. And it’s pretty easy to make in a slow cooker.
TANGY BARBECUE BEEF
■ 2 to 3 cups chopped
celery
■ 1 cup chopped onion
■ 1 cup ketchup
■ 1 cup barbecue sauce
■ 1 cup water
■ 2 Tbsp cider vinegar
■ 2 Tbsp Worcestershire
sauce
■ 2 Tbsp brown sugar
■ 1 tsp chili powder
■ 1 tsp salt
■ 1/2 tsp pepper
■ 1/2 tsp garlic powder
■ 1 3 to 4 lb. boneless chuck roast, trimmed
In a slow cooker, combine the first 12 ingredients, mix well. Add roast. Cover and cook on high for 6 to 7 hours, or until meat is tender. Remove roast, let cool slightly. Shred meat with two forks. Return to sauce.
Serve on hamburger buns.
This next recipe comes from Jan Scroggins of Carrollton, IL. She says she got this recipe for peanut butter cookies while visiting family in Sterling, Illinois.
PEANUT BUTTER COOKIES

■ 1 cup sugar
■ 1 cup brown sugar
■ 1 cup butter
■ 1 cup peanut butter
(creamy, nut crunchy)
■ 2 eggs
■ 1 tsp vanilla
■ 1 tsp baking soda
■ 3 cups flour
■ 3-4 tsp water
Mix well. drop 1 tsp of batter onto a greased cookie sheet. Bake at 350 degrees for 10 to 15 minutes. Makes 3 to 4 dozen cookies.
Here is a tip for baking any kind of cookies: let eggs come to room temperature before using. The eggs will blend more evenly in batters and help the dough rise more easily Let the eggs sit out for 30 minutes (but no more than two hours!) before using. If you forgot to get the eggs out, you can warm them up quickly by placing a few eggs in a bowl and then pouring warm (not hot) water over the eggs. Let sit 5 to 10 minutes.
