One of my favorite pasta dishes is tortellini. Usually, for a quick meal, I use frozen tortellini and jarred pasta sauce. Sometimes though, I like to jazz up my tortellini and this recipe is my go-to. It takes a bit more effort but is worth the time.
TORTELLINI MARINARA
• 1 9 oz pkg tortellini
• 1 lb Italian sausage
• 15 oz jar refrigerated marinara sauce
• 14 1/2 oz can diced Italian tomatoes
• 1/2 lb sliced fresh mushrooms
• 1 cup shredded Mozzarella cheese
Cook tortellini according to package directions. In a large skillet, cook sausage over medium heat until no longer pink, drain. Stir in marinara, tomatoes and mushrooms. Bring to boil, reduce heat. Cover and simmer for 5 minutes or until the mushrooms are tender.
Drain the tortellini, stir into the skillet. Sprinkle with Mozzarella. Remove from heat, cover and let stand until cheese is melted, about 5 minutes.
Note about this recipe: I buy the frozen tortellini and use the whole bag, which is more than the above recipe calls for. I also use jarred pasta sauce rather than the refrigerated marinara called for, mostly because that’s what I always have on hand. I also think one pound of sausage is more than enough, I usually use less than that.
If you like pasta, but are looking for something a little different, here is a recipe I make every so often.
PIZZA PASTA
• 8 oz pepperoni slices
• 1 med. green pepper, chopped
• 1 med. onion, chopped
• 1 envelope spaghetti sauce mix
• 1 cup fresh mushrooms, sliced
• 6 oz tomato paste
• 1 3/4 cup water
• 2 Tbsp vegetable oil
• 8 oz. mostaccioli
• 1 cup shredded Mozzarella cheese
Cook pasta as directed on the package. In a large skillet, brown pepperoni. Drain. Add green pepper, onion and mushrooms. Saute for 5 minutes. Add the envelope of spaghetti sauce mix, tomato paste, water and oil. Mix well. Bring to a boil, reduce heat. Add pasta, mix well. Pour into a casserole dish. Top with cheese. Bake for 15 minutes at 350 degrees.
