As I am writing this column, it’s really hot outside! I have no desire to stand outside at the grill, but still I want to share this recipe. It’s been one of my favorite recipes.
SEAFOOD SKEWERS
4 servings
1/4 cup olive oil
1/4 cup chili sauce
2 garlic cloves, minced
1/2 tsp hot pepper sauce
pepper to taste
16 raw large shrimp, peeled and deveined
8 sea scallops
In a large plastic bag or a shallow glass container, combine the olive oil, chili sauce, garlic, hot pepper sauce and pepper. Add the shrimp and scallops. Seal tightly and turn to coat all sides. Refrigerate for at least 1 hour.
Discard the marinade. Place shrimp and scallops on skewers (if using bamboo skewers, be sure to soak well). Grill covered over medium heat for about 5 minutes on each side.
This is good served with rice. When I make this, I like to marinate the scallops for two hours, then add the shrimp and marinate for another hour.
When I make the above skewers, I like to make Orzo and Rice to go with it.
ORZO and RICE
2 Tbsp butter
1/2 cup orzo
1/2 cup long grain rice (not instant)
1 tsp chicken bouillon
2 cups water
In a large saucepan, melt butter over medium heat, Add the orzo and brown until golden. Add the rice, bouillon and water. Bring to a boil. Cover and reduce heat to medium low. Simmer for 20 to 25 minutes or until all the water is absorbed.
A note about the above recipe: I like to sauté some finely minced onion, garlic and green pepper, then add it to the pan along with the rice and water. You don’t need very much, and it adds a nice flavor.
Orzo is small rice-shaped pasta, usually made from semolina wheat. Many people confuse it for a rice. Orzo, when cooked properly, has a firm chewy texture with a slightly nutty flavor. It’s often used in soups and stews or even salads. Orzo can be healthier than rice, as it has more protein and fiber than white rice. However white rice is often lower in calories and fat than orzo. You can find orzo in most grocery stores in the pasta aisle.
