I enjoy using my grill, but being no GrillMaster, I tend to look for simple and easy ways to grill. Hamburgers, hot dogs and steaks are easy enough. But have you tried grilling ham steaks? It’s simple, so hard to mess up. Sometimes I grill the ham steak just as is–no seasoning or marinade. However, for something a bit more special, here are two recipes for grilled ham steak.
TANGY HAM STEAK
■ 1/3 cup spicy brown mustard
■ 1/4 cup honey
■ 1/2 tsp grated orange peel
■ 1 ham steak
Mix the mustard, honey and orange peel. Brush over one side of the ham. Grill, brushed side up, uncovered, over medium-hot for 7 minutes. Turn, brush with mustard mixture. Cook until hot and glazed, about 7 minutes more.
MARINATED HAM STEAK
■ 1 1/2 cups pineapple juice
■ 1/4 cup brown sugar
■ 2 Tbsp butter, melted
■ 1 to 2 Tbsp ground mustard
■ 1 garlic clove, minced
■ 1/4 tsp paprika
■ 2 ham steaks
Combine the marinade ingredients, mixing well. Pour into a plastic bag or a shallow glass dish. Add ham, turn to coat well. Refrigerate for at least 2 hours, turning occasionally.
Drain, reserving the marinade. Place the marinade in a small pan, bring to a rolling boil. Grill the ham, uncovered, over medium-hot for 3 to 4 minutes each side, brushing often with the marinade.
Did you know that ham steaks are center-cut slices taken directly from the hind leg of a hog? Because pigs use their hind legs to propel themselves forward, these muscles get quite a workout. This makes the meat denser and more textured, more of a meaty feel, thus the term “steak.”
Sometimes ham steaks can be quite salty. If you wish to cut back on the salt, soak the slices in a bowl of cold water for about 10 minutes before cooking. This pulls out some extra salt.
If you want to serve ham steak to guests, but wish to look more like a fancy chef, tell your guests you are serving gammon steak. That’s what ham steaks are frequently called in the UK and Ireland.
