Coming out to the Jersey County Fair this week? Join the University of Illinois Extension for a new and unique opportunity to learn how to preserve food and get some exercise on a bike that makes smoothies! University of Illinois Extension is thrilled to partner with the Jersey County Fair to offer drop-in classes from July 11 through July 13 from 5:30 to 8:00 p.m. There is no need to register; join Extension in the Agricultural Education Center located under the white pavilion!
Jersey County Nutrition and Wellness Extension Educator Lisa Peterson explains, “Each night will be a different opportunity. We’ll be making and canning salsa Thursday, making smoothies using a smoothie bike on Friday, and canning berry jam on Saturday night.” Peterson will also have research-based canning recipes available, and information on freezing, drying, and food storage for garden produce. University of Ilinois Extension is thrilled to showcase 4-H youth development and nutrition and wellness at the fair.
Along with the food preservation and nutrition classes being offered, if anyone has a pressure canner dial gauge on their canner lid that needs to be tested, bring it along to the fair! Pressure canner dial gauges should be tested once a year for accuracy, and this service is offered at no cost through Extension. Peterson will be able to test the gauge on-site for accuracy and provide recommendations for replacement parts from July 11 through July 13 at the fair. Individuals are always welcome to call the Jersey County extension office or drop off a canner lid to be tested as well.
