Recently I was looking through my old columns, looking for a particular recipe when I came across this one. I had forgotten all about this Cheese soup, but after seeing it, I got a craving for it. This recipe comes from Nona Moore. It is delicious!
CHEESE SOUP
Makes 10 servings
■ 4 cubes chicken bouillon
■ 2 1/2 cups diced potatoes
■ 1 cup finely chopped celery
■ 1/2 cup chopped onion
■ 1 20 oz pkg frozen mixed vegetables
■ 2 cans cream of chicken soup
■ 1 pound Velveeta, cut in chunks
■ 1 small can mushrooms
■ 1 head fresh broccoli, chopped (or frozen)
■ 1 head fresh cauliflower, chopped (or frozen)
Bring 6 cups of water to a boil in a soup pot, add bouillon, diced potatoes, celery and onion. Cook for 20 minutes. Add mixed vegetables, boil for 10 minutes. Stir in cream of chicken soup, Velveeta, mushrooms, broccoli and cauliflower. Heat and stir until Velveeta melts. Note: do not let come to a boil after adding the Velveeta.
When I made this before, I used frozen Southern hash brown potatoes instead of dicing the potatoes. if you make this as directed, the broccoli and cauliflower will still have some crunch. If you don’t like this in your soup, you can add the fresh veggies earlier to the soup, or pre cook them slightly.
While I was looking through my old columns, I came across this one that came from Marilyn Hund. This ice Cream Cake sounds delicious and it’s easy to make!
ICE CREAM CAKE
■ 1/2 gallon vanilla ice cream, softened
■ 12 oz Cool Whip
■ 1 12-oz pkg Oreo cookies, coarsely crushed
Mix all three ingredients together, press into a 9×13 dish. Cover and freeze for at least 6 hours.
